A market. The place where the valley’s produce came together before heading out to the rest of the country. Nobody can say for sure when the name stuck, but it fits. That’s still what we do.

Our farming families have been working this stretch of southern Idaho for close to 75 years. Some of them showed up right after WWII with a patch of land and a window of time to make it work or lose it. They made it work. They stayed. And they kept farming, generation after generation, not because it was easy but because it was theirs.

Nearly 50 years ago, the families looked around and realized something: they were all doing the same thing on their own, and they’d be better off doing it together.


Each farm worked different ground. Sandy fields that demand precision on one side, volcanic soil that rewards patience on the other.


Each had its own way of doing things. But together, they could grow more, process more, and control more of what happened between the field and the customer.

Mart Foods starts with six frozen potato SKUs for foodservice. But the operation behind them has been growing, packing, processing and supplying potatoes for generations.

This is where it all began. Our farming families grow, pack and ship fresh Idaho potatoes. It’s the foundation everything else was built on.

When we built our processing facility, we put it right next to the fresh shed so potatoes could move straight from harvest to processing. Today, that’s where our foodservice line begins: six frozen potato SKUs made from one ingredient, Idaho potatoes. Steam-blanched and fully roasted. Never fried.

For years, we’ve supplied processed potato ingredients to some of the largest food manufacturers in the country. They come to us for consistency at scale, traceability and control.

We built a $110 million processing facility in Rupert, Idaho, and put it right next to the fresh shed because we wanted to control what happened to our potatoes after they came out of the ground. Potatoes move from harvest to processing without a middleman, a truck ride, or a delay. Every frozen product that comes out of that plant is one ingredient: Idaho potatoes.

For us, sustainability isn’t a claim added after the fact. It starts in the field. Because our farming families own the company, we have a direct connection to the land, the growers and the decisions that shape what happens next. Our growers measure and work to improve areas like water use, soil health, energy, emissions and food waste. Each farm has its own practices and scorecard, but the goal is shared: keep improving the land we depend on. Our participation in the Potato Sustainability Alliance gives our growers a framework to measure progress, share best practices and identify opportunities for continuous improvement.
